Bacon Wrapped dates Stuffed with Goat Cheese

  • 8 oz goat cheese softened
  • 24 Medjool dates pitted
  • 1 lb bacon


  1. Preheat the oven to 350. 

  2. Pit the dates but taking a sharp knife and cutting the date almost in half, leaving one side intact so you can open and close your date like a little clam shell. Scoop out the pit. 

  3. Fill each date with about 2 teaspoons of cheese

  4. Wrap each date with about a half of piece of bacon. The idea is that you only want one layer of bacon around your date. If the bacon overlaps too much, the underlying layer won't get crispy.  Secure the bacon with a toothpick. 

  5. Bake for 20-25 minutes. About half way through use the toothpicks to rotate the dates for maximum crispiness and even cooking. 

  6. Cool and serve!

These bacon wrapped dates can be made ahead for a party and served at room temperature! 

Goat cheese is not the only cheese that works here! I also love blue cheese for this!
