Fail Proof Hollandaise Sauce

Hollandaise sauce gets a bad rap for being tricky and temperamental, but it doesn’t have to be that way! You can whip up a delicious creamy hollandaise in minutes using one secret weapon …. your blender.

Nothing says “I brunch hard” like a plate of beautiful homemade Eggs Benedict. Fluffy english muffins, salty Canadian bacon, soft poached eggs, topped with a beautiful creamy, tangy hollandaise. Eggs Benny is a staple on the brunch menu for a reason… it’s fantastic. Also for my vegetarian homies, you can ditch the swine and replace it with sautéed spinach, a.k.a. Eggs Florentine. Serve with mimosas and a healthy amount of pride in your brunch accomplishments.

Fail Proof Hollandaise

  • 1/2 lb unsalted butter
  • 3 tbsp lemon juice (or the juice of one lemon) fresh squeezed
  • 3 egg yolks
  • kosher salt
  • cayenne pepper


  1. Melt the butter in a small sauce pan over meduim heat. When the butter begins to bubble and foam, check the temperature. Your should heat the butter to about 190°F.

  2. While the butter is heating blend together the egg yolks, lemon juice, and a little pinch of cayenne pepper and kosher salt. 

  3. With the blender running on low-medium speed, very slowly pour the hot butter into the egg yolk mixture. The sauce should thicken as you blend. 

  4. Taste and adjust seasoning as necessary. Keep the hollandaise in a warm spot until ready to serve. 

Recipe Notes

I love the acidity and flavor of lemon juice, and my hollandaise recipe reflects that. If you are not similarly inclined, start with one or two tablespoons of lemon juice. 

Never put hollandaise over direct heat! This will likely cause your egg yolks to scramble into an unpleasantly lumpy sauce. If you must reheat, do so gently whisking continually over a double boiler on very low heat. 

Make this recipe cannabis infused:
